Stuffed Rotisserie Drumsticks

Ingredients

  • 10 kg (22 lbs) of chicken drumsticks (about 70 drumsticks, depending on size)
  • 2.5 kg (5.5 lbs) ricotta cheese
  • 20-30 fresh sage leaves, finely chopped
  • 10 tablespoons fresh thyme leaves,
  • Salt and freshly ground black pepper to taste
  • 120 slices of bacon

Instructions

1. Preparing the Chicken:

  •  Slice each drumstick and gently push out the meat to make room for the stuffing.

2. Preparing Stuffing:

  • Combine the ricotta cheese, chopped sage, thyme, salt and black pepper in a large bowl.

3. Stuffing the Drumsticks:

  • Fill each drumstick with the ricotta mixture in a piping bag. Gently press the drumsticks together to keep the filling inside.

4. Wrap the Drumsticks with Bacon:

  • Wrap each stuffed drumstick with one or two slices of bacon. Make sure the bacon is tightly wrapped around the drumstick so that it does not come loose during grilling.

5. Cooking in the TDR 8 AC:

  • Place the bacon-wrapped drumsticks in the baskets . Approximately 11 to 12 drumsticks per basket.

6. Roasting in the TDR 8 AC:

  • Preheat the oven to 150°C (300°F). Then place the baskets in the oven and roast for 35 minutes at 190°C (375°F), or until the chicken is cooked and the bacon is crispy.

7. Serving:

  • Place the drumsticks on a serving board. Top with a few sprigs of thyme and a few sprigs of sage.
