Frequently asked questions
What are the primary differences between hot and cold food displays, and can the same unit be used for both?
Hot food displays are designed to maintain food at safe, warm temperatures (above 60°C / 140°F) to prevent bacterial growth and preserve the quality of cooked dishes. In contrast, refrigerated displays keep food chilled at or below 4°C (40°F) to ensure freshness and food safety. Fri-Jado units are specifically engineered for either hot or coldfood—they are not interchangeable. However, they can be seamlessly connected using a single glass window, allowing for a visually unified presentation while maintaining the correct temperatures for both hot and cold foods.
Can I use the same food display for packaged and unpackaged food?
No. Unpackaged food is more vulnerable to contamination and requires specific conditions, such as proper humidity and temperature control to maintain safety and quality. Fri-Jado’s patented technologies are designed to optimise holding conditions for both hot and refrigerated food, whether packaged or unpackaged. To maintain the highest standards of food safety and quality, separate displays are essential.
What is the best holding temperature for food safety?
For food safety, hot food should be held at temperatures above 60°C/140°F to prevent bacterial growth. Cold food should be kept at temperatures below 4°C/40°F to maintain freshness and prevent spoilage. Maintaining these temperatures ensures that food remains safe for consumption, retains its quality and reduces food waste.
What is the difference between a self-serve and a serve-over/full serve food display?
A self-serve food display allows customers to serve themselves, typically found in food-to-go setups. These displays are designed for easy access, food on the go. A serve over – or full serve – food display, on the other hand, is operated by staff who serve the food to customers.
Can Fri-Jado food displays be connected to remote monitoring systems?
Yes. Our displays feature intelligent digital controllers that can communicate with all major monitoring systems, such as Danfoss, Carel, Eliwell, and RDM, via a standardised communication protocol (ModBus over RS-485). This eliminates the need for specialised appliance-specific software and enables users to monitor their equipment through a unified portal.
What is the maximum safe holding time for hot or cold food?
According to HACCP guidelines, the temperature danger zone – where harmful bacteria grow most rapidly – is between 4°C / 40°F and 60°C / 140°F.
-
Hot food should be held at 60°C / 140°F or above and can be safely displayed for up to 4 hours.
-
Cold food should be kept at 4°C / 40°F or below and can also be safely displayed for up to 4 hours.
After this time, food must be consumed or discarded to ensure safety.
